All coffee has a timeline for when it becomes fresh until it loses its freshness. For our beans our perfect window is 1-3 weeks after the beans are roasted, before this the beans hold too much CO2 and have a rank gas flavour to them.
After 3 weeks our beans start to lose a bit of their core flavours, aromas and body, to ensure our beans remain at a consistent level of freshness within this timeframe we store them at peak temperature and humidity and light levels, i.e. in our storage facility each night where it is dark, cool and dry - every morning they get taken out and each night they get put back in, and during they day they are kept in air tight containers and out of the way of any warmth or sunlight.
